首先就是買肉的選擇,要用五花肉,不能太瘦,也不能太肥,要選那種肥瘦均勻的,這樣吃的的時候才會比較香,還有就是考驗切的刀工了,這個要切的薄,切的均勻(比較美觀,也比較好入味),然後加入適量的鹽和胡椒粉。

再放入少許的白糖,再放點雞精,用來提鮮。再放入黃酒(沒有黃酒的可以用白酒替代。用一點就可以了),腌制大概半個小時左右就行了

然後再快加入澱粉抓勻(不要用麵粉)就可以了

起鍋燒油,燒到大概七八成熱的時候,把拌好的五花肉放到鍋裡面開始炸,炸到略微發黃就出鍋,再等一會,將炸的微黃的五花肉再次下鍋,炸至金黃就可以出鍋了
